Dessert crêpes
1 cup flour
2 eggs
1 Tablespoon vegetable or canola oil
1 cup milk (2% or whole milk works best)
Makes 3-4 medium crêpes.
In a medium bowl, whisk together the milk, oil, and eggs with a whisk or fork. Add the flour slowly while continuing to mix. Be careful not to add the flour too quickly as it will cause lumps. Mix well until there are no lumps.
The mixture should be liquid of medium thickness. Add additional milk if it is too thick or floor if it is too thin.
Add oil if needed to a medium fry pan or crêpe machine. Pour about a ladle-full of mixture in the pan or on the machine. When pouring, it is recommended to pour in a circular motion to cover the entire pan. Pouring in one spot will cause the crêpe to be too thick. The mixture should cover the entire pan in a thin layer. Cook on medium for 1-2 minutes or until light golden brown underneath. Flip and cook the other side.
To serve:
Cover about half of the crêpe in the topping of your choice. We recommend using 1. butter and sugar, 2. Nutella, or 3. jam.
Fold in half, then fold in thirds.
